The İskender Kebab is a historic dish that dates back to the late 19th century (specifically 1867) in the Ottoman Empire. Its origin is tied to a single inventor and a revolutionary cooking technique that changed Turkish cuisine forever.


1. The Inventor: İskender Efendi

The dish takes its name from its creator, İskender Efendi (the son of Mehmet). He lived in Bursa, a city in northwestern Turkey. Before his invention, lamb was traditionally roasted over charcoal on a horizontal spit (similar to a rotisserie lamb).


2. The Innovation: The Vertical Rotisserie

İskender Efendi’s "stroke of genius" was moving the grill from horizontal to vertical.

 a. The Problem: With horizontal roasting, the fat would drip into the fire, creating smoke and "burning" the meat's flavor. Also, different customers would get different parts of the lamb (some fattier, some drier).

 b. The Solution: By standing the spit upright, the melting fats dripped down over the meat, "self-basting" it and keeping every layer juicy and succulent. This allowed the meat to be sliced into thin, uniform shavings. This vertical cooking method is the direct ancestor of what we know today as Döner Kebab.

3. The Birth of the Recipe

İskender Efendi didn't just invent the cooking method; he designed a specific way to serve it that has become a "gold standard":

The original restaurant, Kebapçı İskender, still exists in Bursa and is run by the fourth generation of the İskenderoğlu family. While you can find "İskender Kebab" all over the world, the family has a trademark on the name, and many restaurants must call it "Bursa Kebab" instead.
