One of Norway's Most Iconic Food

You Must Try The Unique "Must-Trys"

Brunost (Brown Cheese):

Brown Cheese

Brunost (Brown Cheese) is one of Norway's most iconic foods. It has a distinct sweet, caramel-like flavor and a dense, fudge-like texture. Unlike traditional cheese, it is made by boiling whey, cream, and milk until the sugars caramelize.

It is most commonly served in thin shavings (using a traditional Norwegian cheese slicer called an ostehøvel) on top of:

 1. Freshly baked bread or crispbread.

 2. Norwegian heart-shaped waffles with a bit of butter.

 3. Lompe (potato flatbread).

A true Norwegian classic, brunost is unlike most cheeses you’ve tried. It’s made by slowly simmering whey (often with milk or cream) until the sugars caramelize, giving it a distinctive brown color, fudge-like texture, and sweet–savory flavor.

Taste: Caramel, toffee, slightly tangy

Texture: Firm but sliceable, melts easily on warm food.

How it’s eaten: Thinly sliced on bread or crispbread, often with butter; also delicious melted over waffles or stirred into sauces

Why it’s unique: It’s technically not a traditional cheese at all, but a caramelized dairy product—yet it’s iconic in Scandinavian cuisine.
