Milk and Dairy

While milk and dairy products are not usually the "main dish" in the same way a bowl of rice or a loaf of bread is, they are among the most consumed food groups globally and are considered a vital "animal-based staple."

In terms of sheer volume and dietary importance, dairy is a powerhouse. However, its "rank" depends on how you measure it:

1. By Weight and Volume (The Leader)

If you measure by total weight produced, milk is actually one of the most produced "foods" in the world.

 a. Global milk production exceeds 900 million tonnes annually (as of 2025/2026).

 b. This is higher than the total production of rice (~510 million tonnes) or wheat (~780 million tonnes). Because milk is a liquid, its weight adds up quickly.

2. By Caloric Contribution (The Supplement)

In terms of calories, dairy ranks lower than grains. While rice and wheat provide about 19–20% of global calories each, dairy provides roughly 5–7% of global calories.

 a. This is because dairy is often used as an ingredient or a side (milk in coffee, cheese on pizza, yogurt with fruit) rather than the bulk of the meal itself.

Why is Dairy so widely "eaten"?

Dairy's popularity is driven by three main factors:

 A. Regional Staples: In Western Europe and North America, dairy accounts for up to 33% of total energy intake. In India and Pakistan, milk and ghee (clarified butter) are central to almost every meal.

 B. The "Hidden" Ingredient: You might not eat a "meal of cheese," but dairy is inside a massive variety of global foods, from pizza and burgers to pastries, creamy curries, and sauces.

 C. Rising Wealth: As countries become wealthier, people tend to shift their diets from "grain-only" to include more animal proteins, specifically milk, yogurt, and cheese.

> Did you know? Over 60% of the world's population has some form of lactose intolerance. Despite this, dairy remains a top-tier global food because of its nutrient density (calcium, protein, and B12) and its essential role in infant nutrition.
