The Royal Origin Story
The legend dates back to June 1889, when the Italian monarch, King Umberto I, and his wife, Queen Margherita of Savoy, visited Naples. The Queen grew tired of the gourmet French cuisine typically served to royalty and requested to try the local food of the common people: pizza.
The most famous pizza maker in Naples, Raffaele Esposito of Pizzeria Brandi, was summoned to create three different pizzas for the Queen:
a. Pizza Mastunicola: Lard, cheese, and basil.
b. Pizza Marinara: Tomato, garlic, oil, and oregano.
c. The New Creation: A pizza featuring tomatoes, mozzarella, and fresh basil.

The "True" Neapolitan Standards
Today, the Associazione Verace Pizza Napoletana (True Neapolitan Pizza Association) has strict rules for an authentic Margherita:
a. It must be baked in a wood-fired oven at 485°C (905°F).
b. The dough must be hand-kneaded (no rolling pins).
c. It must use San Marzano tomatoes and Mozzarella di Bufala (Buffalo Mozzarella) or fior di latte.
